Both CAT5e and CAT6 can handle Gigabit speeds. The difference is how long of a run you can make and still run at that speed. Any idea how much ethernet you would need?
Also, was your install for Gigablast or normal cable broadband? I ask because coaxial is not used in Gigablast install. They run fiber into your house into the ONT (fiber modem) which turns it into ethernet. After that, how you get it to your router/network is up to you. See here and here for two blogs of a Gigablast install. If you have a larger then normal home network(multiple APs) or need the router and ONT to be in different rooms, then hiring a professional to install the ethernet may be a good idea.
